Quilter’s Recipes #3-Scrumptious Spreads and Dips

Because of questions about quilting terms, I didn’t post my usual “quilter’s recipes” for the weekend. Not one to get out of habits very easily, I am passing along 2 recipes from my quilting buddy, Ricki Brady, of  San Antonio, TX. Ricki served both of these dips this weekend at a Sip and See event for her brand new granddaughter. They are DELICIOUS and would be great at your next Bee or other gatherings! Enjoy!

Artichoke Dip
1 can of artichokes (16 oz), drained, rinsed and chopped (not in marinade)
2 cloves garlic
1 cup light mayo
3/4 cup parmesan cheese
 
Mix all ingredients in a baking pan, sprinkle with paprika. Bake at 350 for approximately 20-25 minutes. Serve with crackers. Before baking you can add chopped green chilies or chopped black olives if you like. This is always a popular dip at parties.
 
Raspberry Chipotle Dip
1 jar of raspberry chipotle sauce
1 block of reduced fat cream cheese (8 oz)
 
Place cream cheese on serving plate and pour raspberry chipotle sauce over the cream cheese. Serve with crackers or chips.
